Petite Muesli Cookies
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, PALEO
These little lovlies are the perfect thing to munch on if you are feeling peckish between meals. You can pack a couple in your handbag if you’re on the go, or sit down with a cup of tea between chores if you’re at home. You could even have 2... or 3…or 5 for breakfast!
Feel free to swap the nuts and seeds for any combination that takes your fancy!
Recipe (makes 12 petite cookies)
1/3 cup almonds
1/3 cup brazil nuts
¼ cup pepitas
1/3 cup sultanas
1 tbsp coconut jam or creamed honey
1 tsp pure vanilla essence
Pinch of salt
OPTIONAL (but great for added goodness)
½ tbsp maca powder
1 tsp bee pollen
Method
Preheat the oven to 160C and line a baking tray with baking paper.
Place all ingredients in a high speed blender and pulse until well combined. The mixture should be sticky, yet slightly crumbly and hold together well when squished in your hands.
Roll your mixture into 12 even balls.
Now place your rolled balls onto the prepared baking tray and gently press flat with your fingers.
Place in the oven for 8-10 minutes or until very lightly browned on top.
Your cookies will seem slightly too soft initially but will firm up beautifully upon cooling.
