Pleasing Muesli Slice

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, NUT FREE (option), EGG FREE, PALEO

This slice is pleasingly simple, pleasingly versatile, pleasingly satiating, and pleasingly delicious.
Perfect for lunchboxes, picnics or a delightful snack alongside a steaming cup of tea, this Pleasing Muesli Slice is sure to um…please!


Recipe
2 tbsp coconut flour
½ tsp cinnamon
Pinch of salt
100g of your choice of flaked almonds, flaked coconut, or finely chopped cashews (I like to use a mixture)**
20g desiccated coconut
80g seeds (I like a mixture of pumpkin seeds, sunflower seeds and hemp seeds)
2 tsp chia seeds
180g dried fruit (think cranberries, dates, apricots, raisins, figs…whatever takes your fancy!)
¼ cup nut or seed butter (I like to use cashew butter but recommend tahini or sunflower butter for a school safe version)
3 ½ tbsp coconut oil
3 tbsp honey
1 tsp vanilla essence
OPTIONAL
1 ½ tsp maca powder
**NOTE:  If you are using all flaked coconut I recommend reducing the weight from 100g down to 60g

Method
Preheat your oven to 160C.
Line a rectangular slice tin (20cm X 30cm) with baking paper, leaving a little hanging over the sides for easy removal.
Place the coconut flour, cinnamon and salt in a large bowl.
Mix in all nuts, seeds, flaked and desiccated coconut, dried fruit, and maca powder (if using).
Pop the coconut oil, honey and nut/seed butter into a saucepan and stir over a low heat until melted (you can gently melt in the microwave if you prefer).  Remove from the heat and mix in the vanilla essence.
Pour your melted mixture into the bowl of dry ingredients and mix until all ingredients are combined.
Press the mixture into your prepared tin and bake for 15-20 minutes or until golden and firm.
Allow to cool completely in the tin before lifting the slice out with the overhanging baking paper.
Using a very sharp knife slice, serve and enjoy!
