Sweet Potato Baby Biscuits

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, NUT FREE, PALEO, AIP FRIENDLY

These baby biscuits happily cater to most allergies.  The simple flavours appeal to little ones and the sturdy, yet soft, outer shell make these a fantastic little bikkie to gnaw on (without crumbling into a thousand messy pieces… as is common with tight little hands and curious fingers).
Green banana flour is a fantastic prebiotic so these petite beauties will also help to nurture the growth of beneficial bacteria in your little ones belly.
Encased in a sturdily soft (it’s an oxymoron, I know, but that is the best way to describe it!) is a soft, slightly chewy centre that will gently introduce your little one to new textures.
I wish I had found a recipe like this when my little dot was first beginning solids.  She was incredibly fussy and having a batch of these in a container would have been a life-saver.  Parents of children with allergies often can’t find something to replace the standard rice-cakes and rusk sticks.
So I hope that this recipe finds its way into the hands of mummies and daddies who want to make their beloved babes a simple something to munch.


Recipe (makes 12-14)
170g roasted sweet potato (I used 1 peeled orange sweet potato)
¼ cup green banana flour
¼ cup arrowroot flour
2 tbsp coconut sugar (plus extra for optional sprinkling)
Pinch of salt
1 tsp oil (I use olive oil)
2 tbsp water
OPTIONAL
1 tsp cinnamon

Method
Preheat your oven to 180C and line a baking tray with baking paper.
Place your roasted sweet potato in a high speed blender or food processor and puree until smooth.
Place your sweet potato puree in a mixing bowl along with all remaining ingredients.
Mix until well combined.
Rub a little oil into your hands and roll your dough into 12-14 even sized balls.
Place your biscuit dough balls onto the prepared baking tray and gently press plat with your fingers.  If desired sprinkle the tops of your baby biscuits with extra coconut sugar.
Place in the oven for 15 minutes.
Allow to cool on a wire cooling rack.  Serve to your beautiful babe!  And maybe even enjoy one for yourself!
