Powdered Pomegranate Jellies

Today we celebrated my littlest nieces belated 2nd birthday. She has been through an awful lot in her two years of life. She has taught our family so much. She has brought us laughter, tears and a type of ‘togetherness’ we never knew existed. She is a mighty little girl with a wickedly cheeky grin, a strong will, and a love of sloppy kisses.
I made these pomegranate jellies for her and I hope she loved them.
Recipe
1/3 cup water
3 tbps grass fed gelatine powder
1 cup pure pomegranate juice
1 ½ tbsp maple syrup (less or more to taste)
Tapioca flour (for dusting)
Method
First you want to ‘bloom’ your gelatine by mixing it into 1/3 cup of water. It will thicken and become rubbery over the next few minutes.
Meanwhile, place your pomegranate juice and maple syrup in a small saucepan and bring to the boil. Immediately turn off the heat.
Now add your bloomed gelatine, breaking it up into smaller pieces with a spoon and stirring until all the gelatine has melted into your pomegranate mixture.
Pour into silicon moulds or a square container and place in the fridge for 1 hour (or until set).
Remove your jellies from the moulds, or if using a container, slice into bite sized squares with a sharp knife.
If you are like me and enjoy your jellies powdered, place a little tapioca flour in a bowl and drop your jellies in, one at a time, and toss until coated.**
Store in the fridge in an airtight container for 5-7 days.
**TIP: I recommend dusting immediately before serving for visual appeal. In my experience the pre-dusted jellies look a little sad on day two!
