Dainty Dampers
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, PALEO
Imagine the lightness of freshly made scones paired with the rustic appeal of damper. Light with just enough gentle chewiness, these Dainty Dampers are sweet and satisfying. The perfect way to end a busy weekend...or begin a busy week!
Simple and quick to whip up you can make them plain or with a blueberry twist (as pictured). Delicious!
Recipe (makes 4)
1/3 cup blanched almond flour
1/3 cup tapioca flour
3 tbsp coconut flour
1 ½ tsp homemade or GF baking powder
Pinch of salt
1 egg (lightly beaten)
3 tbsp water
1 ½ tbsp coconut oil
1 tbsp maple syrup
1 tsp of coconut sugar (to sprinkle over the top of your dampers)
OPTIONAL
1 cup of fresh or frozen blueberries
Method
Preheat your oven to 180C and line a baking tray with baking paper.
Place the flours, salt and baking powder in a large bowl and stir to combine.
Next add the egg, water, coconut oil and maple syrup and stir until well combined.
Leave your damper batter to rest for 3-5 minutes, this allows the flours to keep absorbing liquid and firm up a little.
Spoon the mixture onto your prepared tray, dividing it into equal 4 portions.
Using damp hands, flatten each portion to approximately 2.5cm thick and shape the edges nicely.
If you are making the blueberry option, use your fingers to create a little ‘nest’ for the blueberries. Arrange the blueberries in the nest.
Sprinkle each damper with a generous pinch of coconut sugar.
Place in the oven for 12 minutes or until beautifully browned.
