Dark Chocolate Truffles

Dark Chocolate Truffles

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, PALEO

This recipe is for all my dark chocolate loving friends just in time for Christmas decadence.
I hope you love them!

Recipe (makes 30)
1/3 cup walnuts
1/3 cup blanched almond flour
¼ cup desiccated coconut
¼ cup cacao powder
3 tbsp pumpkin seeds
Pinch of salt
10 prunes, pitted
5 fresh dates, pitted
¼ cup coconut sugar
70g of 70-100% dark chocolate (or extra cacao powder)
2 tbsp of dried sour cherries, finely chopped for decoration

Method
Place all your dry ingredients in a high speed blender or food processor and blitz until a course, sticky flour forms.
Now place your prunes, dates and coconut sugar in the blender and blitz until you have truffle mixture the consistency of smooth, sticky ganache (oh my word it is sticky!).
Scrape your truffle mixture into a bowl, cover with cling wrap and place in the fridge for 30 minutes or until the mixture is firm enough to work with easily.
Once your mixture is nice and firm (keep in mind it will still be rather sticky) roll into balls and place on a tray or plate lined with baking paper.
TIP:  Rub some coconut oil onto your hands before rolling your truffle mixture into balls.  This will stop your hands from becoming a delicious sticky mess!
At this point I pop my truffles in the freezer while I melt the dark chocolate, (this makes them much easier to coat in chocolate).
Now gently melt your chocolate over a low heat and, using a spoon, enrobe your truffles in chocolate.  Place back onto the baking tray and sprinkle the tops with sour cherries.  
Alternatively roll your naked truffles in cacao powder, sprinkle with sour cherries and place in the fridge until firm.
TIP: Sprinkle the tops with chopped sour cherries BEFORE the chocolate sets!!
Pop your truffles back in the fridge until the chocolate is nice and firm.
It is best store these in the fridge.

These truffles make a beautiful little Christmas gift, provided you can keep them from melting in the oven… oh I mean car before delivery, haha yes I’m a total dag (and currently sweltering in Melbourne’s heatwave!).
