Perfect BBQ Plum Sauce

The way I feel about this recipe reminds me of my quirky dad.  Growing up he had lots of funny sayings one of them being “even without gravy”.   Mum would make us an amazing dinner and us kids would be raving about how delicious it was when my dad would pipe in “even without gravy”.  He would drop us off at school with a “love ya! Even without gravy”.  You get the picture.
I don’t think my dad is even particularly taken with gravy but growing up I thought he must have adored the stuff.  Well, that is how I feel about this Perfect BBQ Plum Sauce. I adore it.  It is amazing.  When I have run out I feel lost in my kitchen.  Give it a whirl and you will quickly see what I mean!

Recipe
1 700g jar of plums in juice, strained and pitted
1 small onion finely sliced

¼ cup maple syrup/raw honey/coconut sugar (feel free to use less!)
1 1/2 Tbsp of coconut aminos (or coconut vinegar/apple cider vinegar)

1 tsp finely grated fresh ginger
2 tsp of fish sauce (optional)
½ tsp salt
½ tsp pepper
A good shake of both Paprika and Turmeric (very technical I know)

Method
Plonk it all in a small-medium sized saucepan and stir over a medium-low heat until the onion is cooked through and you have a thick saucey consistency.  This should take about 15-20 minutes.
Plop it all into a jar and use however you please.


**I use this in place of BBQ sauce on sausages and hamburgers, as a glaze for meatloaf…heck, I even put it IN the meatloaf, a couple of tablespoons in a basic stir-fry suddenly makes it something special, use it as a dipping sauce for Thai Pork meatballs.  There are so many delicious possibilities!
