Luminous Blood Plum Sauce

Vibrant, delicious, and simple, blood plum sauce! Dare I say that I love this plum sauce even more than my original recipe!  I didn't think it was possible, but my, oh my, this sauce is truly a delight.
It is lusciously rich, glossy and is the perfect accompaniment to roast pork (with crackling, yes we go all out!), Italian sausages, meat patties or even a-top chicken drumsticks. In fact we smother it on (and pop it in) just about everything!

Recipe
520g fresh blood plums, mine weighed 495g once pitted (if you can’t get blood plums any other variety will do)
1 small onion or ½ large onion, (mine weighed 90g)
¼ cup coconut sugar
¼ cup water
1 tsp fish sauce
1 tbsp coconut amino (or ½ tbsp of coconut vinegar or apple cider vinegar)
Pinch of salt

Method
Pit and finely slice your plums (do not peel) and place into a medium sized saucepan.
Finely slice your onion and place into saucepan with your plums.
Now pop all other ingredients into the saucepan.
Place your saucepan over a medium heat and cover for a few minutes until the liquid at the bottom of the pot starts to simmer.
Uncover, reduce heat to low, and simmer for the next 30-40 minutes.  Using a wooden spoon, stir your sauce every so often.  As the plums start to soften roughly break them up a bit by 'mashing' them with the spoon.
You will know your sauce is ready once the onion is lovely and tender and the plums have completely broken down to a make luminous deep red sauce as pictured.
Use as you would store bought plum sauce, sweet chili sauce, or BBQ sauce.  We adore this sauce on top of roast pork, sausages, rissoles, meatballs, chicken drumsticks, meatloaf…heck we even pop it IN the meatloaf!  It is absolutely delicious!
