Blueberry Chia Jam

My daughter went through a stage where she would only eat chia puddings for breakfast. We used to make so many different combinations of these things that I am well and truly chia pudding-ed out… for the time being at least! On the plus side, this simple Blueberry Chia Jam was discovered during the gloopy chia pudding days, and boy do I love it!
It is quicker and easier to make than standard jams AND it contains NO refined sugar or hours of stirring over a hot stove.
I think it tastes even better than standard jam! We love it on pikelets or sandwiched between two shortbread thins.
Recipe
½ cup frozen blueberries
1 tbsp chia seeds (any colour…I used black)
½ tbsp raw honey
Method
Defrost and gently warm the blueberries in a small saucepan or microwave. Using a fork mash the blueberries making sure you squish the juice out of all the blueberries. While the mixture is still warm add the honey and mix through to combine. Now add the chia seeds and place in the fridge to ‘set’ for 1-2 hours.
Keep in the fridge for up to a week.
