Comforting Coconut and Almond Porridge

Thanks to the inclusion of olive oil and coconut milk this porridge has a luxurious smoothness, whilst encompassing a gentle, oh-so-satisfying, crunch from the almonds.  I love to nestle a warm bowlful of this velvety goodness in my cold hands on these wintry mornings. 
I hope it warms you up right down to your chilly toes.


GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, REFINED SUGAR FREE, VEGAN, PALEO

Recipe (serves 2)
80g coarsely ground almond meal
2 tbsp coconut flour
Pinch of salt
½ tbsp olive oil
2/3 cup of water
1 cup of coconut milk*

OPTIONAL
1 tsp pure vanilla essence
1 tsp maca powder (great for hormone regulation and a subtle caramelly flavour)

TO SERVE
This porridge is lovely served with mandarin segments, a smattering of cinnamon, and a dash of date syrup (as pictured)

*I source coconut milk that contains only coconut extract and water.  Many varieties of coconut milk contain gums, carrageenan, thickening agents, and ‘E-numbers’ that contribute to gut dysbiosis, if you have tummy issues (and even if you don’t!) be sure to read the label.

Method
Pop the almond meal, coconut flour and salt in a medium sized saucepan and stir to combine.
Next add all remaining ingredients (including any optional extras) and simmer over a medium-high heat for approximately 10 minutes, stirring continuously.
If your porridge starts to splurt wildly reduce the heat and continue stirring.
Once your porridge has thickened up into lovely velvety goodness, remove from heat and spoon generously into your favourite bowl.  Garnish with some delicious porridge toppings!

TOP TIP:  If you are trying to get more healthy fats into your children (or yourself) simply add a tablespoon of coconut oil during the cooking process, and swap the 2/3 cup of water with an extra 2/3 cup of coconut milk. 
If cooking this variation of the recipe, cook on a slightly lower heat, and be sure to stir continuously.
