"Buttermilk" Pancakes
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, NUT FREE (option), PALEO
We are big pancake lovers in this house. I love to eat them in many forms and in various ways:
Mini banana pancakes, pikelets, crepes, pikelets with a few blueberries dropped into the batter. Cold with chia jam on the run, hot with maple syrup and fresh fruit.
These buttermilk pancakes are just as they sound…buttermilky…without the buttermilk! Hooray! They are light and fluffy with the tiniest hint of tang. Delicious, especially when topped with instant yogurt, freshly sliced peaches, blueberries and maple syrup. But right now I’m daydreaming about these babies topped with my Orange Infused Rhubarb and Strawberry Compote…I can’t verify the deliciousness of this combo yet but I will be making a date with this soon and I am SURE it will be AMAZING!

Recipe (makes 10)
3 large eggs
¾ cup + 2 tbsp tinned coconut milk (I use one that contains only coconut extract and water)
½ tbsp lemon juice
1 tsp pure vanilla essence
½ tbsp maple syrup
½ cup blanched almond flour**
½ cup tapioca flour
¼ cup coconut flour
1/2 tsp bicarb soda
Coconut oil (for frying)
**NOTE: For a nut-free option replace the almond flour with another ¼ cup of coconut flour, so you will be using ½ cup of coconut flour in total.
Method
Place your eggs in a large mixing bowl and whisk until nice and frothy.
Now add the coconut milk, lemon juice, vanilla essence, and maple syrup.
Whisk until well combined.
Sift the remaining 4 ingredients over your wet ingredients, and finally, stir until well combined.
Allow your mixture to rest for 3-5 minutes.
Meanwhile heat a generous amount of coconut oil in a frying pan (I like to use raw cast iron) over a medium heat.
Give your batter another stir before taking a large serving spoon and dropping large spoonfuls onto your preheated frying pan.
Flip each pancake after it begins to firm up a little on the uncooked side and bubbles are popping through the surface (about 3 minutes).
Fry on the other side for a further 1-2 minutes or until lightly browned.
Serve with your choice of toppings!
