Two Ingredient Fritters

These fritters are magical, only two plant-based ingredients, yes you heard me right, just TWO plant-based ingredients.
They have a lovely consistency that marries beautifully with a couple of soft boiled eggs, some garlicky mushrooms, blistered tomatoes, and fresh basil. 
Sounds delicious right? They most certainly are!

Now you might be wondering how on earth these fritters actually hold together!
Enter the magical plantain.  This curious ingredient tastes a little like white potato, but looks like a bright green, hideously under-ripe, over-sized banana.  Thanks to their starchiness, they stick everything together with ease.  Now I shall just pre-warn you about plantains, don’t expect them to peel like a banana.  You have to chop them up and cut their skins off with a knife.  Once grated, you’ll notice that the fruit is incredibly sticky, this stickiness is what will bind your tasty fritters.

Oh and just in case you keep counting that ingredient list and keep coming back with FIVE ingredients not TWO, I’m not counting the salt, pepper, and olive oil as ingredients.  Is that a bit cheeky of me?  Perhaps, but I mean...you could totally leave out the seasoning and oil if you want to...they will still work, but won’t be quite as tasty as I like them to be.

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, NUT FREE, VEGAN, PALEO, AIP

Recipe (makes 6)
1 large plantain, peeled and grated
1 sweet potato, washed and grated
Salt and pepper to taste
Extra virgin olive oil

Method
Preheat the oven to 200C and line a large baking tray with baking paper.
Place your grated plantain and sweet potato in a mixing bowl. 
Add salt and pepper to taste and stir to combine with a wooden spoon.
Using your hands roll your fritter mixture into 6 even sized balls and place onto your prepared baking tray.
Now firmly press each ball to approximately 1-2cm flat with your fingers.
Drizzle with olive oil and pop into the oven for 10 minutes.
When the 10 minutes are up remove your fritters from the oven, flip them, and place them back in the oven for a further 5 minutes, or until beautifully crispy on the edges.
Now enjoy with all your favourite fritter toppings!
