Soft & Simple Banana Pikelets
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, NUT FREE, REFINED SUGAR FREE, PALEO
These sweet lovelies are made from nourishing whole foods that will fuel your body and delight your soul. They are free from dairy and grains, as well as being adored by my three year old, who continues to request them time and time again. I love how simple they are, how soft they are, and how deliciously they fill my morning hunger pangs.

Recipe (serves 2)
1 large banana (mashed)
2 large eggs
2 tbsp coconut flour
2 tbsp arrowroot flour
Method
Whisk your eggs and banana together in a mixing bowl until your mixture is well combined and a little frothy.
Add the coconut and arrowroot flours and continue whisking until well combined.
Meanwhile preheat a frying pan over a medium heat and melt a tbsp of coconut oil in the pan to grease.
Then simply dollop generous spoonfulls of your pikelet batter onto the pan.
When a few little bubbles begin to pop through the top of your pikelets it's time to flip them. Then fry on the other side for a further minute-or-so, or until lightly browned.
Repeat until all your batter is gone.
Serve with yoghurt, berries, and a gentle drizzle of maple syrup. Sweet breakfast bliss.
