Pear Bircher Muesli

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, PALEO

My Nanny is a woman of style.  She wears lovely silk scarves and beautiful jewellery.  She is one of those women who always look ‘put together’, even when you turn up unannounced, even when she has been having a mid-day snooze. 
When I was younger she would let me go through her jewellery boxes.  I would put her rings on my fingers and hold her earrings to my ears, imagining I was her.  I thought she was brilliant, loving, fun, beautiful and full of all things wonderful.
Breakfast with my Nanny always called for rolled oats topped with plain yoghurt and tinned fruit.  She would let me eat it with a parfait spoon and give me the ‘special tall chair’ with the woven wicker base.  Somehow breakfast with her always felt like a treat.
Now that I am grown I recognise that there is so much more to my Nanny than what I saw as a child.  She is brave, long-suffering, selfless, fiery and fierce.  She has been through so much and still manages to carry herself with grace and kindness.

Recipe
2 crunchy pears, grated
3 tbsp lemon juice
½ tbsp maple syrup
3 medjool dates, finely chopped
1/3 cup dried cherries (dried cranberries, currants or sultanas work too)
4 tbsp desiccated coconut
3 tbsp pumpkin seeds
½ tbsp chia seeds
¼ cup cashews, chopped
1/3 cup pecans, chopped
1/3 cup of Instant Yoghurt (or firm coconut milk/cream)
¼ cup Mylk

Method
Mix everything together in a large bowl.  Voila you're done!


NOTE: I like to make this the night before, simply for breakfast-time ease, but you can make it in the morning if you prefer.  Just leave it to sit in the fridge for at least 20 minutes before serving.  This allows the chia seeds to do their thing of binding and soaking up a little liquid.
I love having a batch of this waiting for me in the fridge.  It is such a satisfying breakkie!  I even pop it in the microwave and have it warm on days I need the comfort of holding a big bowl of warm goodness before starting my day.
