Blueberrry Pull-Apart Bun

Many, if not all of my recipes are born out of necessity. This morning we had no eggs for pikelets, not enough mylk or coconut milk for tapioca porridge, no fresh fruit for making bircher muesli, and not enough time to wait for chia pudding. Enter the blueberry pull-apart bun.
Miss Two called this “boo-bree bread” and had fun searching for all the blueberries hidden in her piece.
The texture of this bun is perfectly stretchy and chewy encased in a crust with just the right amount of crunch. What a perfectly indulgent Saturday morning breakfast!

Recipe (serves 2 adults…plus a two year old)
½ cup tapioca flour
1/3 cup blanched almond flour
¼ cup coconut flour
1 tsp maca powder (optional…but good for balancing hormones and adding a slight caramel taste)
2 tsp homemade or GF baking powder
2 tbsp coconut sugar
¼ cup tinned coconut milk
¼ cup water
1/3 cup frozen blueberries
1 tsp coconut oil to glaze
½ tsp cinnamon
extra tsp of coconut sugar
Method
Preheat the oven to 160C and line a baking tray with baking paper.
Place your flours, maca powder, baking powder and coconut sugar in a bowl and stir to combine.
Mix through the coconut milk and water to form a malleable dough.
Fold through the frozen blueberries and form the bun dough into a ball.
You can either fiddle with the dough to create a pretty shape or squish it out to make an oval about 3cm thick and call it ‘rustic’ (this is what I do because I’m usually hungry and impatient).
Now glaze your bun with 1 tsp of melted coconut oil.
Combine your extra tsp of coconut sugar and the cinnamon in a small bowl and sprinkle over the top of your bun.
Place in the oven for 15 minutes or until nicely browned and crunchy on top.
I would suggest drizzling the top of this with melted coconut butter before serving, but alas, we had none of that in our cupboard this morning either! We served it up with fresh strawberries instead and devoured it alongside piping hot drinks.
My hubby smothered his with maple syrup and tucked in with a knife and fork to make it extra indulgent.
