Chocolate Superhero Smoothie bowl
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, NUT FREE, PALEO, AIP FRIENDLY (option)
Remember YoGo? It was one of the ultimate treats in our house as a kid. I can’t even comprehend how excited I would have been if my mum offered me a chocolate YoGo for breakfast. It would have been wide-eyed, open mouthed, unspeakable excitement to say the least!
Well, mummies and daddies this is your opportunity to feed your kids (and yourselves!) chocolate YoGo for breaky (minus the terrible ingredients and massive sugar crash)! This smoothie bowl will absolutely win you over with your kids. I mean, I don't know one kid who wouldn’t be thrilled to wake up to a giant bowl of chocolate. Not to mention YOU can feel like an amazing, superhero knowing that you have filled your little people with spinach, avocado and all manner of ‘super-foods’ (I can’t believe I just used that term…I hate that term) first thing in the morning!
I like to pop all the ingredients in my blender the night before, store it in the fridge and blitz it all up come breakfast time! Easy peasy!
Recipe (serves 2)
1/3 cup firmly packed baby spinach
½ large, ripe avocado (or 1 small avocado)
1 cup coconut milk
3 tbsp raw cacao (or roasted carob for AIP friendly)
2 ½ tbsp maple syrup (less or more to taste)
1 tsp pure vanilla essence
½ tsp cinnamon
OPTIONAL (but recommended for added goodness):
½ tbsp bee pollen
½ tbsp maca powder
1 ½ tbsp hemp seeds (omit for AIP friendly)
Method
Place all the ingredients in your blender and blitz until you have a silky smooth consistency.
Pour into bowls and decorate with your choice of toppings.
I like to garnish mine with cacao nibs, blueberries, strawberries, pumpkin seeds and desiccated coconut (as pictured).
Alternatively, tuck in as is to a bowl of pure chocolate deliciousness!
