Easy Peasy Paleo Baking Powder

If you are trying to eat a Paleo diet, or even a gluten free diet, you may not have thought about reading the ingredients on the back of your baking powder.   Standard baking powders can contain all sorts of rubbish so it’s a good idea to take a look before you buy.

It is also good to know that baking powder is very simple to make yourself!
There are a few of ways of doing this so I’ll just include the 2 variations I like best.

The only impractical thing about making your own baking powder is that you can’t make up a big batch to keep in your pantry.  It needs to be used immediately, for lots of boring and annoying reasons.  I know, I know, I tried it anyway, it doesn’t keep.  Just trust me on this one. 
For this reason I keep a bag of store bought baking powder in my pantry for days I’m in a rush.  Just be sure to buy it from a company that doesn’t use junk!  Mine contains only baking soda, cream of tartar and a little rice flour (we can tolerate this amount of rice on occasion, but you may not).

Read on for these 2 simple variations of the homemade stuff, for the most part this is what we use in my house!

Recipe number 1
Cream of Tartar
Baking Soda (also called bicarb soda)

Method
Mix 1 part baking soda to 2 parts cream of tartar.  That’s it!
To make the equivalent of 1 tsp of store bought baking powder mix ¼ tsp with ½ tsp of cream of tartar and voila you’re done!


Recipe number 2
Lemon juice
Baking Soda

Method
To make the equivalent of 1 tsp of commercial baking powder mix ¼ tsp of baking soda with 1 ½ tsp lemon juice. 
This is probably my favourite version, it just feels even more wholesome!
