Soaking/Activating Nuts and Seeds
SOAKING NUTS AND SEEDS
Soaking nuts and seeds in order to ‘activate’ them helps to “neautralise antinutrients and maximise their digestability" (Pete Evans, Going Paleo; p 21)
I am hopeless at getting around to doing this. It honestly takes no time to pop them in a bowl with water. It just takes a little forethought to soak them for the appropriate amount of time BEFORE you want to use them. I’m working on it and will be an organised person one day, I hope.
Recipe
Pop your nuts or seeds in a bowl and cover with water. After soaking them for the time listed below, rinse them and pat dry. Now that they are ‘activated’ you will want to keep the nuts/seeds in the fridge and consume them within a few days.
If you want them to last longer they can be dehydrated in your oven on a very low heat (No higher than 60C) for up to 24 hours, these should now keep for a few months in an airtight container.
Soaking Times
Almonds, brazil nut and hazelnuts – 12 hours
Macadamias and pumpkin seeds – 9 hours
Walnuts – 6 hours
Cashews, pecans and pistachios – 4 hours
Sunflower seeds – 2 hours
