Simple Almond Cake

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, REFINED SUGAR FREE, PALEO

This is simply a sweet unpretentious, delicious cake.  You know, the kind of cake that is nice, comfortingly simple, versatile, and yummy. Nothing more, nothing less.  You can dress it up with fancy toppings, or cut yourself a lovely big hunk and enjoy it ‘naked’ with a steaming cuppa.  Comfort food that appeals to the whole family and doesn’t stress out the cook!
It is easy to whip up and is pretty much disaster proof.  Literally, wack it all in the blender, blitz, spoon into the pan, bang into the oven, and eat.  Done.
It is moist without stepping into ‘mud-cake’ territory, and has the beautiful ‘crumb’ that you expect a glutinous cake to achieve, without the gluten of course...or any grains for that matter.

Recipe
250g roasted almonds*
60g tapioca flour (starch)
Pinch of salt
60g coconut sugar
1 tsp pure vanilla essence
½ tsp bicarb soda
60g coconut oil (melted)
3 eggs
1 tsp coconut vinegar (you can substitute this for apple cider vinegar if you wish)

*You can quick roast your own almonds at a pinch by popping raw almonds in the oven for 10 minutes on 180C

Method
Preheat your oven to 160C and line the base of a standard round spring-form cake pan with baking paper. Grease the sides with a little coconut oil.
Now, pop your roasted almonds, tapioca flour and salt in a food processor (or high speed blender) and blitz, blitz, blitz, until a sticky flour forms.
Now pop the remaining ingredients into your food processor and pulse until well combined.
Pour/spoon the cake mixture into your prepared cake pan and smooth out so your mixture is evenly distributed in the pan.
Now pop it in the oven for 30 minutes, or until the top springs back when pressed gently with your finger.
Allow to cool in the pan.  Serve with your favourite topping!  We thoroughly enjoyed this cake topped with my Salted Almond Caramel (as pictured).  But I’m certain it would also be delicious with Vegan Chocolate Ganache or White Chocolate Buttercream.
