Dainty Salted Caramel No Bake Bikkies

GLUTEN FREE, DAIRY FREE, SOY FREE, EGG FREE, PALEO

Today is hot.  Nudie rudie baby bot hot.  Shut the windows, close the curtains hot.  Laze around and do nothing hot. But my little miss asked, ever so politely, for bikkies. So bikkies were made.  
There was no way I was going to put the oven on and risk us all self combusting, so we whipped up these beauties instead.
They were such a hit that between the 3 of us there are only 4 of these dainty nibbles left... and we haven’t even finished our coffees yet!

Recipe (makes 12)
1/3 cup almonds
¼ cup pepitas
¼ cup sultanas
2 tbsp cashews
1 scant tablespoon of maca powder
2 ½ tbsp coconut jam or coconut caramel
1 tsp vanilla essence
Pinch of salt

Method
Place all the dry ingredients in a high speed blender and pulse until a sticky crumb forms.
Place remaining ingredients in the blender (the coconut jam and vanilla essence) and pulse until well combined.  The mixture should be sticky yet ever  so slightly crumbly and hold together well when squished in your hands.
Roll them into balls and gently press flat with a fork or your fingers. Place these beautiful sticky concoctions in the fridge or freezer to firm up into chewy, caramelly perfection (15-20 minutes in the freezer or 1-2 hours in the fridge)
Enjoy with a beverage of your choice and drift into bliss.
