Dreaded (decadent) Chocolate Avo Mousse

GLUTEN FREE, DAIRY FREE, EGG FREE, NUT FREE (option), SOY FREE, PALEO

Every real food blogger has their version of this beautiful monstrosity that they assure you is the best version invented yet.  I can’t claim any fame.  I did not discover the magic that is avocado mousse.  But this is my version.  It is decadent, it is luscious and has fooled many a junk food eater.  You should see their eyes open wide when they discover that the secret ingredient is not double cream as suspected, but is rather beautifully ripe avocados.
You can almost justify eating a whole batch of this on your lonesome, almost. 
As a mummy I make this when my daughter is fussy, she will eat it guaranteed.  Don’t tell anyone but I’ve even served it up for breakfast.  Yep, I’m THAT mum.  I tell myself it’s ok because it has more nutrients than rice cereal, less sugar than *cough* froot loops *cough* and is brimming with good fats.  Now that I’ve convinced you all that this is a perfectly acceptable breakfast, here is the magical recipe.

Recipe
1 ripe avocado (It MUST be ripe, if it is hard you will get chunks of green which is not very appealing to the eyes and totally blows your cover that this is healthy)
1 can of full fat coconut milk
¼ cup raw cacao
1/3 cup raw honey (less if you aren’t a super sweet tooth)
1 tbsp maple syrup (or extra honey)
2 tbsp coconut oil
2 squares of 70%-100% chocolate (yes you heard me right, 100% chocolate is a thing, a powerful, powerful thing)
Pinch of salt
OPTIONAL

2 tbsp of nut or coconut butter (I like macadamia butter for this recipe)

Method
Gently melt the raw honey, coconut oil and nut butter in a microwave or over a low heat until combined.  Scoop out the solid coconut from your can of coconut milk and place in the blender along with ¼ cup of the coconut liquid that sits at the bottom of the can.  Now pop everything else in your blender and whiz until it is well combined with no lumps.  You may need to scrape down the sides of your blender a couple of times to achieve a perfect, lump free consistency.
Refrigerate for an hour before consuming.  If you are too excited to wait you can absolutely eat it straight away, but it will be the consistency of a very rich ganache (as pictured...who am I kidding, I can't wait that long!) rather than a thick mousse.
Serve as is or topped with cherries, berries and whipped coconut cream.
