Mylk

GLUTEN FREE, DAIRY FREE, SOY FREE, EGG FREE, NUT FREE (option), FODMAP FRIENDLY (option), PALEO

This recipe provides a basic template for a variety of nut, seed and coconut mylks.  My favourite version is showcased below but I often change it up depending on the nutrients my family need at the time, what needs using up in my pantry, or just because I want to try something new.

This recipe makes 750mls-1 Litre of deliciously creamy mylk.  I’m talking so creamy you get a layer of cream on top…you know like that amazing Jersey cow milk you get at fancy stores, like that, except there’s no cow involved.

Recipe
1 cup of your choice of nuts, seeds or flaked coconut
1 teaspoon of maple syrup/raw honey/1 fresh date (this is optional but makes for about the same level of sweetness as cow’s milk)
1 teaspoon of pure vanilla essence (this is also optional but I would advise leaving it in if you want to drink the milk straight outta the glass)
A pinch of salt
3-4 cups of water (depending on your desired level of creaminess)


Method
If you have the organisation skills and time it is a good idea to soak the seeds and nuts before use, otherwise pop everything into a high speed blender and blitz on high for 2 minutes.  Strain through a nut mylk bag or through a muslin cloth…I used one of my baby’s old muslin wraps for about a year until I finally invested in a bag.  Worth. Every. Penny.  No one wants any amount of fluffy cotton in their mylk, no matter how minute the amount may be.

My favourite mylk combo
¾ cup of raw cashews
¼ cup of preservative free flaked coconut
1 teaspoon of maple syrup
1 teaspoon pure vanilla essence
Pinch of pink Himalayan salt
3 cups of filtered water


Follow the method as described above.

**You can use any combo of seeds, nuts and flaked coconut.  Think brazil nuts, hemp seeds, macadamias, hazelnuts...the possibilities are endless!  Experiment and let me know what combo you like the best!
