Salted Almond Caramel
This salted almond caramel is quite simply SUBLIME. It is the kind of delicious that makes people stop talking abruptly and their eyes get rounder and rounder...if you know what I mean (if you are unfamiliar with this kind of ‘yum’, I suggest you make this Salted Almond Caramel to see what I mean).
In our house we especially adore it smothered over a lovely warm hunk of my Delicately Sweet Golden Loaf or Chocolate Brownie – it transforms both delights into truly decadent, crowd pleasing desserts. We have also enjoyed it swirled through chocolate bark, or sandwiched between some cookies. If you are anything like me it will make you do a little happy dance with yumminess.
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, REFINED SUGAR FREE, PALEO, VEGAN
Recipe
¼ cup coconut sugar
2 tbsp maple syrup
4 tbsp of smooth almond butter
2 tbsp - ¼ cup water (2tbsp for a thick fudgey caramel, ¼ cup for a runnier caramel, both will be pourable when warm)
Generous pinch of salt (I like to use pink Himalayan salt)
Method
Pop all the ingredients into a small saucepan and simmer gently, whilst stirring briskly with a fork or small whisk, until lusciously rich and caramelly (5-10 minutes).
