Cashew Butter

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE , EGG FREE, REFINED SUGAR FREE, PALEO, VEGAN

At any given time this is my daughter's food of choice.  She adores all nut and seed butters but everything else pales into insignificance when cashew butter is on the table.  I've even heard her talk about her beloved cashew butter in her sleep, and if that doesn't convey the total deliciousness of this simple butter then I don't know what does!  Safe to say it's a staple in our pantry and gets made time and time again!
This recipe is so, so simple to make that I feel odd calling it a recipe.  That said, if you're keen to enjoy a lovely jar of this butter for yourself then read on, it really is delightfully easy!

Recipe
250g raw cashews

Method
Preheat the oven to 150C and evenly spread your cashews over a large baking tray.
Roast your cashews for 8-10 minutes or until lightly fragrant and browned.
Lightly roasting the cashews intensifies their nuttiness whilst helping them to release their oils during the grinding process.  This will result in a smoother, creamier butter.
I like to allow my cashews to cool before grinding but you can happily proceed right away, just be careful not to burn yourself...it's rather risky business, I've burned myself more than once in the past!
Pop your roasted cashews into a food processor or high speed blender and blitz, blitz, blitz until your cashew butter is lusciously smooth and creamy.
Keep in mind that you will have to scrape down the sides of your blender or food processor between 'blitzes' a few times before the desired consistency is achieved.
Now spoon into a jar and use as you please.
We love to spread it on pikelets, slather it on top cupcakes, stuff fresh dates with it (and a teeny sprinkle of salt, yum!), or eat it straight off the spoon!  It's truly a simple, delicious staple in our pantry.
