Hazelnut Chocolate Truffles

Roasted hazelnuts and chocolate? The answer is always yes!
These lovely truffles are so very simple to make and taste totally exquisite. I whipped them up as a special treat for a picnic on my Daisy girl’s third birthday. We all absolutely loved them! But most importantly Miss 3 announced that they were “yummy delicious” and gobbled up more than I would ordinarily allow, pure delight on her face and chocolatey goodness covering her cheeks and fingers.
NB: Those of you who eat a low FODMAP diet, please keep your serving size at 2-3 truffles. Hazelnuts are safe to consume at 15g per serve, so you don’t want to go eating half the batch, as much as you may find the temptation rather strong!
Recipe (makes 20)
FIRST BLITZ
100g roasted hazelnuts
2 tbsp best quality cacao powder (or cocoa powder)
3 tbsp coconut sugar (you can happily substitute the coconut sugar for brown sugar, maple sugar, or palm sugar)
3 tbsp desiccated coconut*
SECOND BLITZ
20g of 90-100% dark chocolate (melted)
1 tbsp coconut oil (melted)
1 tbsp maple syrup
1 tsp vanilla essence
TO COAT
Dark Chocolate, cacao powder, or roasted and crushed hazelnuts (my preference is the cacao powder)
Method
Place the ingredients for the ‘first blitz’ in your food processor (or high speed blender) and blitz until a sticky crumb forms.
Scrape down the sides of your blender and add the ingredients for the ‘second blitz’ to your food processor until a lovely sticky truffle mixture forms.
Now roll your truffle mixture into 20 balls and place in the fridge to ‘set’ for 1-2 hours.
Finally roll your truffles in your desired coating...or simply eat them as they are!
These truffles are indeed stable at room temperature so you can happily keep them in your pantry in an airtight container if you wish.
We especially enjoyed these delights alongside cups of steaming peppermint tea while picnicking in a pretty, sunny spot in the garden. I hope they delight you as much as they do my little family!
