Paleo Fruit Free Muesli Slice
A little something for my friends who have bellies that dislike fructose.
This little muesli slice is the kind of home-baked treat that my dear mum used to make for us growing up...although her version always contained oats, butter, and plain flour, I like to think that this creation is equally delicious.
I have sepia toned memories of bustling home from school with a ravenous appetite to the smell of a baked delight cooling on the kitchen bench. Soft, satisfying, and wholesome, this slice is nostalgically scrumptious.
Perfect with a cup of tea, or for ‘afters’ on a picnic lunch.
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, REFINED SUGAR FREE
Recipe
130g of nuts – finely chopped*
1 tbsp sesame seeds
1 tbsp chia seeds
30g desiccated coconut
50g dark chocolate chips**
2 tbsp coconut flour
1 tsp cinnamon
3 tbsp coconut sugar (you can use brown sugar if you wish)
Pinch of salt
¼ cup coconut oil - melted (or butter if you tolerate dairy)
1 egg
1 tbsp maple syrup
*I like to use a mixture of nuts but you can happily use 130g of flaked almonds for your baking ease.
**Be sure to source dark chocolate chips that are free from yucky ingredients, mine contain only unrefined cane sugar, cocoa mass and cocoa butter.
Method
Preheat the oven to 180C and line a large loaf tin (or square cake tin) with baking paper.
Place all your dry ingredients in a large mixing bowl and stir to combine.
Next whisk all your wet ingredients together (melted coconut oil, egg, and maple syrup), and stir through your dry mixture until you have a lovely dough.
Now firmly press the muesli ‘dough’ into your prepared baking tin.
Pop into the oven for 12-15 minutes or until lovely and golden on top.
Allow your slice to cool before slicing with a sharp knife.
Now pop on the kettle, make yourself a lovely hot cuppa, and enjoy!
