Delicately Sweet Golden Loaf

This lovely little cake is a gently sweet and simple 'loaf-style' cake that is pleasingly and wonderfully versatile.
It is moist, soft, and ever so slightly caramelly - thanks to the inclusion of maca powder (an ingredient that I absolutely adore).

We have enjoyed this loaf many different ways: 
-Gently warmed and topped with lashings of my decadent Salted Almond Caramel for a spectacularly delicious dessert
-Sliced up as ‘bread’ and transformed into French toast for a glorious Sunday brunch (simply soak your loaf slices in whisked egg and coconut milk before frying in a hot pan, preheated with a little oil, lastly top with all your favourite French toast trimmings)
-Slathered in almond butter and banana slices for a perfectly satisfying ‘anytime’ snack
-Sweet and simple - eaten ‘as is’ - with a steaming cup of your favourite tea, and a good book for company.

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, REFINED SUGAR FREE, PALEO

Recipe
½ cup + 2 tbsp blanched almond meal
¼ cup tapioca flour (starch)
2 tbsp coconut flour
1 ½ tbsp maca powder
½ cup coconut sugar
½ tsp bicarb soda
Pinch of salt
3 eggs
1/3 cup coconut oil (melted)
2 tbsp maple syrup
½ tsp coconut vinegar (or apple cider vinegar)
3 tbsp water


Method
Preheat the oven to 180C and line a standard sized loaf pan with baking paper.
Now place all the dry ingredients into a large bowl and stir until well combined.
Now place all the wet ingredients into a separate bowl and whisk together until well combined.
Make a well in the centre of your dry ingredients and pour your wet ingredients into the centre.
Now gently stir your batter together until combined.
Finally spoon your cake batter into the prepared loaf tin and smooth out the top.
Now pop your loaf into the oven for 20 minutes (or until beautifully golden on top and the top springs back when pressed gently).
Allow you loaf to cool for at least 10-15 minutes before slicing with a sharp knife and devouring however you please.
