Charming Banana Custard

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, NUT FREE, PALEO

This banana custard charmed me so much the first time I made it that I made it again the very next night…and then seriously considered it for breakfast the day after that.
The simplicity of this recipe, the way it whips up so swiftly, the perfect silky sweetness, and the pleasantly satisfied belly that this custard renders is just so darned charming!
It has since been requested multiple times by both husband and daughter!  I hope that you too will agree that this Charming Banana Custard lives up to its name!


Recipe (makes two hungry helpings or four petite portions)
1 large overripe banana (weighing approximately 150g peeled)
2 eggs
1 ½ cups of tinned, full fat coconut milk (I use one that contains only coconut extract and water)
¼ cup filtered water
½ tbsp maple syrup
1 tsp pure vanilla essence

Method
Place all the ingredients in a small saucepan.
Submerge a stick blender into the mixture and whiz until your raw custard is pureed and slightly frothy on top.
Now place over a medium-high heat and whisk continuously for 5-6 minutes or until your mixture has thickened ever so slightly.
Once again submerge your stick blender into the custard and puree to ensure a silky smooth consistency.
Ladle into bowls, smatter with cinnamon, and prepare to be charmed!
