Thai Pork Meatballs
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, NUT FREE, PALEO
These make a simple, tasty meal and are so quick to whip up! They are fresh, moreish and versatile.
There are so many possibilities!
-Serve them up in lettuce boats with grated carrot, fresh coriander and sliced peppers (pictured)
-Pop them in a stir fry for some extra oomph
-Take them with you to an event as part of a sharing platter.
The only ‘rule’ I would make about these is that they should ALWAYS be served with my Perfect BBQ Plum Sauce, because it just works so well… and I adore the stuff!
Recipe (makes approx. 26)
500g pork mince
¼ cup fresh coriander, loosely packed
2 tbsp fresh parsley, loosely packed
1 spring onion, roughly chopped
1 tsp fresh turmeric, finely chopped
1 tsp fresh ginger, finely chopped
1 large garlic clove, crushed
1 tsp coconut aminos
Small dash fish sauce
Pinch of salt, cracked black pepper, paprika
Method
Preheat the oven to 200C and line a large baking tray with baking paper.
Place the coriander, parsley, spring onion, turmeric, ginger and garlic in a high speed blender or food processer and blitz until everything is very finely chopped.
Pop the remaining ingredients in your blender and blitz until well combined.
Now roll your mixture into meatballs and place on the baking tray.
TIP: A little olive oil rubbed into your hands helps if the mixture is sticking to your hands during the rolling process.
Drizzle lightly with olive oil and bake for 15 minutes or until well browned.
Serve with my Perfect BBQ Plum Sauce!
