Lamb Sausages

GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, NUT FREE, PALEO, AIP FRIENDLY (option)

I’m not gonna lie.  These are gruesome to make and are not for the squeamish.  That said, I would consider myself rather squeamish when it comes to this sort of thing and I cope… fairly well. 
I just prepare the icky bits really fast and do a little jig in the kitchen when it starts to feel too irksome.  You can do it!  I believe in you!

These are really yummy and I have made them for my extended family (yes they knew I fed them liver) and they all enjoyed them too.  You know what they say!  The proof of the pudding…

Recipe
500g lamb mince
100g liver (this is usually about 1/3 of a liver)
50g bacon fat, finely chopped (you can use ¼ cup of duck lard instead but bacon fat is far superior)
3 Tbsp Perfect BBQ Sauce (or 1 ½  tbsp maple syrup/raw honey)
½ tsp dried and ground paprika (or 1 tsp mace for AIP friendly)
¼ tsp salt**
¼ tsp cracked black pepper (omit for AIP friendly)
**NOTE:  If you are using duck lard instead if bacon fat you will need to increase the salt to at least ½ a tsp.

Method
Preheat the oven to 200C and line a large baking tray with baking paper.
Prepare your liver by washing it and removing the ‘skin’.  You can ask your butcher to do this for you if you wish.  It is a truly gruesome task.
Place the 100g of liver in a high speed blender and puree.  It will pretty much turn into liquid.  Don’t freak out.  Just jump up and down a little, you’re ok, I’m with you on this!
Now place all the other ingredients in your blender on top of the liver and pulse until well combined.
Using well-oiled hands roll the sausage mixture into long thin sausages.  If you don’t want it on your hands pop on a pair of food prep gloves.
Once your sausages are all rolled out nicely drizzle in oil and place in the oven for 10 minutes.
Once the 10 minutes are up turn your sausages and bake for a further 5-10 minutes, or until well browned.
Good job!  You did it!  Now serve with Perfect BBQ Plum Sauce and enjoy!
