Vegan Chocolate Ganache
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, NUT FREE, REFINED SUGAR FREE, PALEO
This ganache is true decadence. We LOVE this on top of my chocolate brownie, for dipping strawberries, or to dress vanilla cupcakes.
It really is the perfect finish for an incredibly rich chocolate fudge cake and is perfect for birthdays, desserts, special occasions or to make a drab day wonderful.

Recipe
½ a ripe avocado (medium sized)
3 tbsp maple syrup (less or more to your taste)
2 tbsp coconut oil
40g dark chocolate (70-100%)
2 tbsp cacao (or cocoa)
Method
Place the avocado and maple syrup together in a food processer or high speed blender.
Gently melt your chocolate and coconut oil together and then tip into the blender on top of the avocado and maple syrup.
Now blitz until the mixture in your blender is smooth and well combined (you may need to scrape the mixture down a few times until you get a lovely smooth consistency).
Finally add the cacao and blend on medium speed until smooth and well combined.
Spread on top of fudge cake, dollop onto cupcakes, or dip some strawberries… but you absolutely must lick the spatula, it’s the privilege of the cook!
