Sticky Date and Roasted Pecan Bliss Balls

I love pecans. There, I said it. I love their delicately sweet earthiness. Not to mention how much I love them lightly roasted to that dangerously perfect level of addictive crunchiness.
I also love dates. Those soft, caramelly, medjool dates in particular have my heart.
If you, like me, adore these two wholesome delights then these are for you, with love from me x
Recipe (makes 15-18 depending on your bliss ball size preference)
1 1/3 cups raw pecans
2/3 cup desiccated coconut (plus extra for coating, optional)
9 large medjool dates (pitted)
1 tsp pure vanilla essence
Pinch of salt
Method
To begin spread your pecans evenly across a baking tray and lightly roast them at 160C for 6-8 minutes or until crispy and fragrant.
Next pop your desiccated coconut into a food processor or high speed blender along with your roasted pecans and salt.
Pulse until a crumbly butter forms.
Now add your pitted medjool dates and vanilla essence and process on a medium speed until your mixture is sticky and well combined.
Roll into balls of your snacking preference size. Pop in the fridge to firm up for an hour or so before rolling in extra desiccated coconut or crushed pecans.
Store in the fridge and enjoy for snacks, treats, breakfast, supper, a midnight snack...or you know, share them with someone you love!
