Tomato and Basil Salad
GLUTEN FREE, GRAIN FREE, DAIRY FREE, SOY FREE, EGG FREE, NUT FREE, PALEO
This simple salad is both refreshing and beautiful. I have made various versions of this since I first stepped foot in the kitchen.
If you tolerate dairy throw in some roughly torn bocconcini or mozzarella. In my opinion this is one of the simplest and most delicious flavour combinations ever put together. It is effortless and tastes of perfection!
Alternatively add a few strips of crispy prosciutto, a handful of toasted pine-nuts, some black olives, or serve it up as it is, beautiful and simple!
Recipe (makes a small side salad for 4)
250g of cherry tomatoes (I like the tri-coloured variety)
1 large handful of roughly torn basil leaves
1 clove of crushed garlic
1 tbsp olive oil
Pinch of salt
Pinch of cracked black pepper
Method
Cut your cherry tomatoes in half and place in a bowl.
Now add the basil leaves, garlic and olive oil. Gently toss the salad until your garlic and olive oil is evenly distributed.
Top with a pinch of salt and generous amounts of black pepper.
